Lime & Avocado Tart

Avocados

Avocados are a nutrient-dense fruit that contributes to a healthy diet. Avocados are packed with nutrients and are a good source of fibre and healthy monounsaturated fats. We love to eat our avocados in smoothies, as guacamole on top of Mexican-inspired meals, and of course, smashed avo on toast! 

Ingredients:

Base: 

300g of nuts of your choice (I used walnuts and almonds)

100g pitted dates (Medjool dates are best, however, if using packet dates, soak them in boiling water first for 30 minutes to soften them. Drain off the water before adding them to the mix)

2 Tbsp of raw cacao powder

2 Tbsp coconut oil

1/4 tsp cinnamon 

Pinch of salt

Filling: 

4 Avocados

15 Tbsp Coconut Oil

120g of Agave Syrup

Zest of 2 Limes

Juice of 4 Limes

Pinch of Salt

To Serve:

1 punnet of fresh berries of choice

or freeze-dried berries 

Directions: 

Pulse nuts of choice in a food processor until crumbly. Add pitted dates, raw cacao powder, coconut oil, cinnamon, and a pinch of salt. Pulse the mixer until combined and then transfer the mixture to a springform tin (9 inches) and press it down firmly and smooth it out into the corners. Freeze the base while preparing the filling.
In a clean food processor add the avocados, coconut oil, agave syrup, lime zest, lime juice, & a pinch of salt. Blend the filling until very smooth and pour the mixture over the frozen base mixture, gently spreading it out. Freeze the tart overnight to set. Serve with fresh berries or freeze-dried berries.
